Berks County Filling
 
6 medium potatoes 2 tbsp butter 1 medium onion
3 sliced bread 1 egg 1 1/2 cups milk
2 tsp salt dash pepper chopped parsley  
       
Peel potatoes and boil in salted water until soft.   Meanwhile, chop and brown onion in melted butter.  Tear bread apart into tiny pieces.  When potatoes are cooked, mash.  Add onion, bread, 1/2 cup milk, salt, pepper, parsley.  Beat until smooth and then add egg and remaining cup of milk.   Beat again.  Turn into greased casserole and bake 1 1/2 hours at 250 degrees, or stuff into fowl.
